The
operation of KNA involves production of fish powder, which is dried
powder from fresh seafood material intended for human consumption.
Initially KNA will focus on production of fish powder made from fish heads,
fish bones, and cutoffs from cod and catfish and potentially
also shrimp powder made from shrimp shells. Cod and catfish will
be the main fish species used as raw material making cod powder and cod-catfish
powder mixture respectively.
The powder is produced by a novel method where the raw material
(fresh fish material or shrimp shells) is ground into fine particles and
dried at the same time in a few seconds at a high temperature and air
velocity thereby maintaining protein and other important substances intact
through the process.
Besides producing fish powder, this technology provides a new way to
process fish offal from fish processing plants thereby changing it from
being a problem to becoming a valuable product.
